Ham Salad Ham Salad

This is a great way to use any leftover ham from Easter!

Difficulty: Easy

Ingredients Add to grocery list

2 cups leftover ham, chopped in a food processor
1 cup finely diced celery
1/4 cup finely minced sweet onion
1 teaspoon Dijon mustard
2 hard-boiled eggs, diced
1/4 cup hot pickle relish, drained
1/2 cup mayonnaise





Mix all ingredients until well blended. Serve on crackers or bread as a sandwich.

Had all the ingredients except the pepper relish so I blended ¼ of jalapeño cream cheese spread with mayo reduced to ¼ cup and Wow! Super Delicious! I'm not one for very hot stuff but it had just the right kick! After taking it on a few crackers, I had to put it away for my party tonight or I would have ate the whole container! Yumm! Bread & Butter pickles are delicious in ham salad. I use just the pickles and mayonnaise. Gives the ham a 'country ham' flavor.

This ham salad is so good! Reminds me of my Virginia roots. I remember my mother going to her ladies group and bringing home a foil wrapped roll stuffed with ham salad that she would reheat in the oven. Heaven!!

I absolutely love ham salad!! It's one of those things you don't always have but when you do it's so yummy! This is almost exactly the way I make my ham salad except for the mustard and I don't put my boiled eggs in the salad, we like them on the side. But the one thing that my mom and grandma always did was put a "heaping" tablespoon of peanut butter in the ham salad...I know it sounds weird but you gotta try it!!

I just tried this Ham Salad and I have to say it is the best I have ever made. I did'nt have the celery so I used celery seeds and it is still good. The next time I will use the celery. Thanks Paula

My only experience with ham salad was for lunch in elementary school. My husband tried this recipe, and I was not sure whether I wanted to try it, but was pleasantly surprised...much better than the cafeteria lady's recipe!
